Egg-citing fun!

The problem persists when you have a big family like it do that Breakfast is on the go. Pop-tarts, cereal bars, all those things that are so unhealthy, but yet you have to have because sitting down is not an option. Well, I didn't invent the egg sandwich, but I am sure going to make sure my family eats a healthy one for breakfast.
Here is a quick and easy way to have breakfast on the go, without all the hassles of earlier wake-up.

First, you turn your oven on at 350 degrees. Get it started warming.

Then get out your old faithful muffin pan. You want to make sure to spray your pan with Pam or some other non-stick spray so that your eggs won't stick to the pan. Take out a  dozen eggs. Break one egg into each muffin bowl. Add salt and pepper to taste. It should look something like this....
After you add the salt and pepper, place into the oven. Bake for 15 minutes.

Now, I had to take my eggs out so that I could add my sausage. I didn't cut, but tried to measure out the same amount. It took a regular sausage roll to fill the pan like this.

I didn't change the temp on the oven and basically cooked the sausage the same way as the eggs. In the oven at a temp of 350 degrees for about fifteen minutes. When the sausage is good and brown, you know you are finished.






Now, it is time for your sausage to be done and I just went ahead and placed mine on top of my eggs like so....

Now, if you like cheese, it is a great time to add the cheese so that it melts on top of the sausage. This is easy to do. Take your favorite sliced cheese and bend it in half once, then again so that you have four equal sized squares. Add it to your proteins....like so...
OK, so now we have everything but the bread. You can buy canned biscuits or english muffins or make yours from scratch like I do. With dough....
Bake your biscuits at 450 degree oven for about fifteen minutes until they are very golden brown and light and fluffy!

Now it is just assembly!

So, now that you have them all assembled, all you have to do is put them in the freezer to cool for about an hour. This allows any of the moisture to get out of them so that they won't be packaged soggy.

After about an hour of cooling, place in your plastic wrap. You can have them all week without the rush of the day to keep you out of it.
